Slow Cooker Chicken Fajitas

Slow Cooker Chicken Fajitas

3 lb, bag frozen boneless chicken breasts

1 or 2 packets of fajita seasoning

1 onion, chopped

2 green peppers, sliced

Juice of 1 lime

Cilantro

1/2 c. salsa

Flour tortillas

Toppings:  sour cream, avocado, salsa, cheddar cheese

 

Cook chicken on low for about 2 hrs. Then, sprinkle packets fajita seasoning over the chicken and add the onion and green peppers.  Add lime juice, cilantro and salsa. Cook for 2-3 hrs longer on low, or until the chicken shreds easily.

 

Serve on tortillas with sour cream, avocado, salsa, and cheddar cheese.

 

This would also make a great soup– just add a few cans of chicken broth, and maybe some black beans.
