What to do When a Brunch Buffet is not an Option

We’ve all done our share of coping with COVID-19. But if you don’t have a plan, then it maybe hasn’t dawned on you that, absent the standard plethora of restaurant offerings this year, you’re going to have to figure out something fast for your Mother’s Day meal. (For those in a quarantine time warp, Mother’s Day is Sunday, May 10.)
If you’re like most indomitable dads (like me), your first thought is the grill. At SpringfieldMoms we say: Yes. By all means, go with you strength. But remember it’s a special day, so rather than sticking with the same old same, put some spice in your grill game.
To help all you husbands, dads, sons, daughters and significant others, we’ve gathered some resources to help you expand your grill master’s repertoire. (And, if you happen to be a Mom, you can pass this info on to the person in your life who needs to see it.)
More than Burgers, Brats and Steaks
The Official Webber Grill Site’s Recipes Page is an obvious, but useful, place to start. Red meat has been done too often, so we recommend steering towards the Pork, Poultry, Seafood and Veggies sections of the website. You can get fancy with a Starter. The Bacon-Wrapped Jalapeno Shrimp Poppers are a deceptively simple option that offers a lot of taste for not much effort. (The toughest part is remembering to soak the toothpicks for a half hour.) For Dessert, we suggest Fire Roasted Strawberries served atop vanilla ice cream.
Cooking with gas isn’t everyone’s thing. We get that. For traditionalist that like the smoky flavor of charcoal, check out Kingsford’s How to: food web pages. Beef Kabobs take only about an hour to make. They offer a nice blend of simple, smoky and exotic. And how about some Grilled Pineapple for dessert?
Dad doesn’t need to go it alone. The chefs at thekitcn.com have put together a collection of 10 kid-friendly recipes, so the rest of the family can cook while mom gets some me-time. We think the Ultimate Korean Short Ribs are a can’t miss. But plan ahead to give yourself at least an hour to marinate the meat. If homestyle is more your style, you can’t go wrong with Buttermilk Grilled Chicken.
