Egg Sausage Brunch: Rated Best Breakfast Casserole

Well, in our household this one rates #1.  It could be the fact that it has a dozen eggs and whipping creme and in the recipe.  The Egg Sausage Brunch recipe from the Junior League of Springfield’s Honest to Goodness cookbooks has long been a family favorite.  It’s the type that could can make the day before and bake the day of, but the prep time is minimal and the cook time is just 30 minutes so we make it for a lot of occasions! By the way, this cookbook makes a wonderful gift to someone new to Springfield, and there are numerous recipes I’ve tried; so reach out to me if you need a list of starter recipes!

Ingredients:

  • 3 cups shredded Cheddar Cheese (divided)
  • 1 dozen eggs (don’t skimp- use the full dozen!
  • 2/3 cup whipping creme
  • 1 pound sausage, browned and well drained (sometimes we use turkey sausage, but the real deal is always awesome!)
  • Salt and freshly ground pepper to taste.

In the bottom of a 9 X 13 baking pan (prep with Pam spray or buttered) sprinkle half of the the cheese on the bottom. Beat eggs and pour evenly over the cheese; add salt and pepper to taste. Add cream throughout, sprinkle sausage over all, and top with remaining cheese. Bake at 350 degrees for 30 minutes.
