Crock Pot Vegetable Soup: Easy, Delicious and Nutritious!

farmers_market_produce48 oz V-8 Juice

1 can cut green beans

16 oz frozen mixed vegetables

1 can kidney or red beans, drained

1 can corn

1 can peas

3 raw carrots, diced

1 onion, diced

1 pkg. dry onion soup mix

2 potatoes, cubed

parsley

basil

Combine all ingredients in a crock pot and cook on high for 3-4 hours, and then on low for 2 hours. Submitted by Dawn Raycraft.
