“Being a Southern Girl, my dad used to make Chicken n’ Dumplins all the time. I grew up watching him make it and then as I learned to cook, adjusted it the way I liked. It’s super easy, not labor intensive, and uses ingredients I usually have on hand. It is a perfect cold weather meal. Anytime I am sick, or stressed, or just missing my dad, I whip up a pot and instantly feel better.”
Chicken n’ Dumplin’s
1 pound (give or take) of chicken (any type…I like to use breasts but have also used pieces with bones and then just removed from bone after cooking)…
1/4 to 1/2 bag baby carrots, sliced
1/2 onion chopped
3-4 cloves fresh garlic chopped
salt, pepper, poultry seasoning, crushed red pepper as desired
Jiffy Biscuit mix
Fill large pot a little over 1/2 way with water and seasonings (as desired) and boil chicken, garlic, onion, and carrots until done. Remove chicken and cut into bite size pieces. Return to pot. Make Dumplings according to Jiffy Mix directions on box for Dumplings (I double their recipe) and drop dough by the spoonful into the boiling pot. Reduce heat to simmer, cover, and simmer for 20-30 minutes.
