Farmhouse “Muffins”

These muffins (which make a great lunch or even dinner served with a vegetable and fruit) are delicious and kid-friendly! 1 lb. ground beef 1/2 cup ketchup 3 tbsp. brown sugar 2 tbsp. cider vinegar 1/2 tsp. chili powder 8 oz. shredded cheddar 2 pkg. canned biscuits (makes 16) Brown and drain ground beef. Lightly spray bottoms of muffin pan. Flatten biscuits slightly using rolling pin or juice glass; press into bottoms of muffin cups and shape up the sides to form a small "bowl." Mix the other ingredients and fill each muffin cup with the mixture. Bake at 350 for 18-20 minutes. Submitted by Amy McFadden
