A New Twist on Pancakes: The “Veggie” Pancake

Thanks to Springfield Moms reader Amy Wolf for this healthy pancake variation:

“We make veggie pancakes (but my little one doesn’t know about that part of the recipe). I had him make green pancakes with food coloring and then when he’s not in the room, I add pureed frozen spinach and a little cinnamon and vanilla extract.  When he makes them orange, I add carrots, a little cinnamon and add chocolate chips to make a pumpkin face after they are done. I enjoy breakfast so much more knowing he’s eating some veggies.”
